When we made this stuff while living in Louisiana several years ago we used forks rather than a whisk, holding it flat on the pan...it seemed to get the roux off the bottom of the pan a little better.

One thing he didn't mention is that you should take the roux out of the pan immediately since it will continue to cook.  If the roux is dark those few extra minutes could easily burn it.
