This recipe works well with Dove, Quail, Pheasant, Duck, Geese.  Prepare your game bird by cutting into quaters if using larger birds, if choosing to use dove or quail you can boil the whole bird without cutting into quaters. Then take your game bird of choice and boil it for about 30 minutes, then add one large tomato, onion chopped up along with spices garlic, salt, pepper, cumin.  Boil for another 15 minutes then add 1/3 cup of rice and boil for additional 15 mintues then add four or five potatoes cut into small cubes, then boil for another 20 minutes.  This is a great meal during the winter time and I have been told a good remedy to help cure a cold or flu symptoms.  Definitely a South Texas tradtion and very easy to prepare.
