Here is a favorite of our duck hunters who come to Uruguay to duck hunt with Los Gauchos Outfitters (www.duckhunturuguay.net)
DUCK BREAST STRONGANOFF
*6 tbsp butter
* 1 pound marinated duck breasts cut thin into 1X2.5 inch wide strips
*1/3 cup chopped onions
* 1/2 pound cremini mushrooms, sliced
*salt/pepper to taste
*1/2 tsp dr tarragon or 2 tsp of chopped fresh tarragon
*1 cup sour cream at room temp.
1. Melt 3 tbsp of butter in a large skillet on medium heat. Increase the heat to high/med-high and add the strips of duck. While cooking the duck, sprinkle with salt and pepper. When both sides are browned, remove the duck strips to a bowl.
2. In the same skillet, reduce the heat to medium and add the chopped onion. Cook the onions for a minute or 2, allowing them to soak up the duck drippings. Remove the onions to the same bowl as the duck strips.
3. In the same skillet, melt another 3 tbsp of butter. Increase heat to med-high and add the mushrooms. Cook, stirring occasionally for about 4 mins. Sprinkle the tarragon on the mushrooms.
4. Reduce the heat to low and add the sour cream to the mushrooms. You may want to add a tablespoon or 2 of water to thin the sauce (optional). Mix in the sour cream thoroughly. Do not let the sour cream curdle --watch the heat! Stir in the duck strips and onions. Add salt and pepper to taste.
ENJOY!
Again, just one of several duck dishes Los Gauchos Outfitters (http://www.losgauchos.com) serves in Uruguay during the Uruguay duck hunting season - May to August. Come join us and have a taste of this dish and more!
